Homemade DIY Zespri Kiwifruit Ice Lollies

I know it’s a little early in the day for this post but I just had to get it out before Summer actually begins and I’m so excited for it! It’s my most favourite time of the year!


After being gifted some juicy Zespri Kiwifruit this summer, I decided that what better way is there to enjoy and also preserve these lovely SunGold fruits, because honestly I don’t love eating fruits, I just do here and there to get my nutrients. So I decided to freeze them and then a week later, I said, screw that…I’m going to make them into ice lollies…and not just any ice lollies, I set out and made these nourishing fruits into alcohol pops using Sainsbury Brut given to me at Christmas 2014, as a gift!






What I realised this summer that I love about Kiwifruits, is that they are tangy, even better when served cold and they don’t leave you with too much mess! I also learnt that Kiwifruits are high in antioxidants with a powerful combination of fibre, vitamins and minerals without the calories and provides your daily requirement in Vitamin C in one little kiwifruit package. Fun Fact: Zespri Kiwifruit has x3 times more Vitamin C than oranges and is x 10 times more nutrition than apples!


Anyway, enough blabbing from me, here’s a step-by-step guide on how I made my delicious Zespri Kiwifruit & Champagne Ice Lollies (at home)




Homemade Zespri Kiwifruit Ice Lolly Recipe


PREPARATION TIME: 15 MINUTES

COOKING TIME: 2-3 HOURS

FEEDS: 4-6 PEOPLE


INGREDIENTS

1 (and a half) Small Red Onions – Finely sliced

3-5 Cloves of garlic OR prepare yourself some garlic paste (recipe coming soon) – Peeled, crushed and finely chopped

1 Small glug of Coconut Oil – Try Lucy Bee’s Coconut Oil is my fave!

2 Bay leaves OR a handful of Spinach leaves


Plus! A blender/ food processor i.e this Ninja
